Anyone else in a cooking rut? I am currently working from home, homeschooling a fussy teen while experiencing (probably) perimenopause related weight gain, and trying to produce something suitable day after day is doing my head in! So I thought let's share our favourite vegan resources for inspiration!

My top 3 all-time favourites:

Lazy Cat Kitchen https://www.lazycatkitchen.com/

Swedish Vegan https://www.facebook.com/swedishvegan/

One Arab Vegan https://www.onearabvegan.com/

Bonus extra in Finnish: Chocochili https://chocochili.net/

I have also had successes with:

Hot for Food https://www.youtube.com/channel/UCudzojQxnLAI7uQPVYJy_oQ

Maple Spice http://www.maplespice.com/2010/03/double-chocolate-mousse-layer-cake.html

Vegan Zombie https://www.youtube.com/channel/UCWHMNEyuD444gXZ_S4IN2zQ

Sorry, I meant to respond to this post sooner but I got distracted!

Some of my favorite soup recipes come from this blog: Eat Healthy Eat Happy (specifically their Collard Green Veggie soup - it's amazing).

I've tried only one recipe from this blog (pasta puttanesca) but it was sooo good and easy and everything on here makes me hungry: From the Comfort of My Bowl

These guys have a website and a youtube channel. I've tried some of their baking recipes with good results: The Happy Pear

And I'm just randomly obsessed with this recipe, it's one of my favorite dishes I've ever made: Couscous With Chickpeas, Fennel, and Citrus
