I'm a huge Isa Chandra Moskowitz fan, my favorite of hers is probably Isa Does It for easy, punchy meals. I make quite a few meals out of that book regularly. Terry Hope Romero also has some good books, though I find the quality and accessibility of her recipes to be a little more inconsistent. Vegan Eats World is pretty fun for takes on world cuisine. I also really enjoy Afro Vegan by Bryant Terry, because it's flavors you don't often see explored in vegan food.
