I've tried various vegan sausage recipes (using wheat gluten, using smashed cooked beans, using chickpea flour, you name it) and although they have tasted okay (thank you, nutritional yeast), they have never held their shape. Here is an example of the type of recipe I have tried.
Does anyone have any tried-and-true tips or go-to recipes? I love the idea of being creative with adding different ingredients, but I'm frustrated at the crumbly texture which I always seem to end up with.

Awesome, I will have to try these. I definitely haven't tried including chia seeds before, and that might help them hold together. The photos in this recipe also look really helpful. Thank you again for both the suggestion and your added details :)
