I've tried various vegan sausage recipes (using wheat gluten, using smashed cooked beans, using chickpea flour, you name it) and although they have tasted okay (thank you, nutritional yeast), they have never held their shape. Here is an example of the type of recipe I have tried.

Does anyone have any tried-and-true tips or go-to recipes? I love the idea of being creative with adding different ingredients, but I'm frustrated at the crumbly texture which I always seem to end up with.

Thanks! Most of the recipes I have tried involved a similar steaming method. Did you steam or bake them? Did you use the sausage casings that this recipe mentions as an optional step?
