aren‘t potatoes the best 😍 there‘s this turkish dish, called „Kumpir“ and it‘s sooo good. It‘s a large potato, filled with different vegetables, butter (it’s usually not a vegan dish, but one can easily veganize it) and you can fill it with jalapeños, corn, olives and many more things. I think there are plenty of recipes online.

Oooh, I'm saving this thread! So many good ideas. My favourite way to have potatoes lately is to cut them into ~1/2 inch cubes, boil them, add them to a pan of sauteed onion and mushrooms and add some cashew cream (or other vegan cream) w/ just a little black pepper and nutmeg.

I made this potato and cabbage curry last month and it was so good.

Gado-gado & skip the egg - Indonesian tofu/potato/veg salad with peanut sauce.

Can't go wrong with sausage and mash, I put mustard in the mash and make a red wine and onion gravy.

I have actually eaten that Indian recipe before! But, the Indonesian one is completely new to me. Haha you are actually the second person to suggest cooking my potatoes with peanut sauce. I think that's what I will end up doing for dinner.

If you want to keep them for a while, using them as sides over the course of a few meals, I recommend slicing them up into fries and freezing them. If you’re into McDonald’s-style, short-term crispy, salty fries, check out J. Kenji Lopez Alt’s write-up here. Other potato sides can include:

  1. Straightforward roast potatoes (another write-up by Lopez-Alt on that matter here)
  2. Duchess potatoes (make-ahead duchess potatoes recipe here if you want to freeze a larger batch - personally, I much prefer duchess potatoes to a regular mash)
  3. Hasselback potatoes (found a somewhat decent Guardian article on this issue here)

Otherwise, if you want to use up the potatoes in a single dish, you can’t get any more sinful and decadent than a creamy gratin.

I also recently bought a book called ‘Smashed, Mashed, Boiled, and Baked--and Fried, Too!’ by Raghavan Iyer (Amazon link here) which deals with the topic of potato recipes specifically, and I can’t recommend it enough.

Hello, OP! I just realised the duchess potato recipe I shared is actually not freeze ahead (I can’t find a freeze ahead vegan recipe 😥). It’s still delicious, but be wary that freezing those might carry some experimental risk!

I have been dicing mine, boiling soft, and then cooking them in the pan later for hasbrowns/breakfast potatoes or whatever you want to call them.

I love adding roasted potatoes to salad! There is really something about adding hot potatoes to cold greens that is very satisfying, especially if there is a pickled element like pickled red onions or capers along with it.

Potato nachos are also great, especially if you have an air fryer. Just slice them into rounds and roast/air fry until crispy, then top with all the typical nacho fixings like salsa, pico, avocado and vegan sour cream.

I also throw them in breakfast bowls/burritos with Just Egg or tofu scramble. They are wonderful in this context when seasoned with paprika for that smokey taste!

Oh, "aartappelgereg." Literal translation: potato dish. I know you're vegan, but I don't know what you usually swop out, so I hope it's okay I give you the basic version?

Boil the potatoes and cut I to slices. Arrange those in a deep dish. Mix cream (heavy cream? I've seen this in recipes and don't know what makes it heavy, sorry), salt, pepper, and powdered white onion soup, and pour over the potatoes. You can add some fried mushrooms. Sprinkle with cheese - whichever you prefer. Bake until the cheese is melted.

Also seen a version with some spinach, with the spinach slightly cooked beforehand.

Oh, nice. I'd never even heard of this dish before. I can easily get non-dairy cream and cheese where I am so I can definitely make this!
