It seems like you can only get the spoiler tags to work for a few words. If you try to hide a paragraph behind spoiler text, it gets buggy and turns the text into a quote. At least this is the case for me (I've tried it on both my cell phone and my laptop)

Thanks for the bug report. I added a note about this to our bug list, where we already have a bug about using the quote button on multiple paragraphs.

After playing with this a little, I think the issue is the new line. All of the format options exhibit the same behavior, which is that the format will only be applied to the text up to the new line. The work around is to highlight only one paragraph at a time to apply your formatting. I don't know if this is a bug or just how this has to work. Not a developer, lol. But if that's something that could be fixed/ improved, it would make things easier.
