Advice WantedHarvesting chicken of the woods/sulfur shelf

There's a chicken of the woods/sulfur shelf growing back for the second time in a spot near my house. It's growing really rapidly, maybe doubling in size each day. Today is the third day since it sprouted... The first day I noticed it there were two patches 5x2x1in (~13x5x2.5cm) and today it's two patches 5x5x3in (~13x13x7cm).

Anyone who likes to forage have any advice on when is best for me to harvest?

P.S. As for eating them, I'm thinking of making caramelized onions and mushrooms with white wine for baba ganoush, but I will have plenty left over to make creamy mushroom soup or the best sounding recipe anyone might suggest :) :)

Wait until the growth has stopped, or slowed substantially. If you eat chicken, you can add it to any recipe that calls for chunks of chicken meat. It can be hard to tell them apart!
