Starting to cook more of my own food and looking for some inspiration, especially meals that only have about 3 main ingredients plus a few herbs and spices. I’m not picky and don’t mind bland food. I try to keep it simple because if a recipe has lots of steps, I usually end up forgetting some. It’s ok if a recipe takes time, like soaking overnight; it’s the complexity that I’m trying to avoid.
Some of my go-to’s are a sweet potato with EVOO and cumin seeds, PB on toast, oats and berries, tacos with roasted veggies, and beans and rice (I especially love natto!) I’d love to be able to make more soups and stews. Anyone have a favorite mushroom soup recipe?
Especially interested in simple meal ideas from around the world. I live in an area where a wide variety of ingredients from different regions are available, and there’s lots of things that I want to try but am a little intimidated by.
I would appreciate any suggestions!

The problem with compliments is they often make me feel like I'm being set up. I have all these wonderful qualities that people then want to eat up, metaphorically speaking in my case, so how much is it a compliment?
I really like this comment, I don't think I've seen anyone articulate this feeling before but you're absolutely right. Compliments can feel like a form of manipulation, training someone to exhibit the qualities praised. Now I am trapped because praising this insight could itself be read as a form of compliment.
