I try to eat fewer high carbohydrate foods for health reasons (I've a tedious genetic long term illness) and I thought I'd post about it here.
Today's recipe that I'm looking at is leek and potato soup.
No potatoes, obviously. :)
I made this the same way I'd've made it in ye olden times, except I swapped the potato for courgette and left out the carrot. So...
I topped and tailed the courgettes and the leeks, sliced them up, and put them in a pan over a low heat with just enough water to cover them.
I added two teaspoons of salt substitute, brought the pan to the boil, and then turned the heat down, put the lid on and simmered it for twenty minutes, stirring occasionally.
After letting the soup cool a bit, I blended it with a cup of plant milk.
Not quite as creamy as the potato version but would I have noticed a difference if I hadn't made it myself and hadn't been told about the courgette? Doubt it. I'd make this again.
This amount of vegetables makes two bowls of soup.
Are there any interesting, well-developed female characters? I had a hard time with Jonathan Strange and Mr Norrell because it had a such a boys' club atmosphere.
Talking about any characters is a bit of a spoiler so I've tagged it.
I haven't read it but I've been wanting to for a while, I think because I saw someone recommend it on here. I have a hold on the ebook version from my local library but I have to wait 10 weeks 😩 (I've also had this hold for several weeks already...)
