I went into the garden expecting to pick parsley and sage, maybe some kale if it wasn't too badly infected by white flies. But turns out we also had a beetroot, carrots and a bit of rucola :D I actually didn't think any of our carrots would succeed.

Ah, thanks! I knew it wasn't called rucola in English too >< we planted some in late spring and managed to get enough for a salad before they bloomed. But now they're having a few new leaves :D
Rucola is more correct, and I knew what you meant. I don’t know how the English pronunciation started. It’s one of my favorite things to grow—so easy, as long as it’s cool enough., and delicious.

I think my climate is pretty similar to Denmark’s. I sow arugula a bit before the last frost date and harvest it by June or so, then plant again in August or September, yeah. In summer it bolts.
That's great! I can use it after the main crop then! Time to re-do my plans for next year
Those are the most beautiful beet greens I have ever seen. Oh man I want to saute them up with some garlic and a little herbed vinegar for my breakfast right now.
Ooh! I saved them to figure out how to use them later, but now you solved the problem for me :D do you think they could also be stuffed and fried/steamed/baked?
I don't eat a lot of pizza, but when I do, I put chopped kale on top after the pizza is done. Super tasty. I just tried it last autumn because it was the only leafy green left in the garden at the time, and it worked very well.

Thanks ☺️ I will boil some green lentils with carrot, beet, onions, kale and a bit of garlic. Then I make a honey glazed hasselback butternut squash with sage and walnuts. I plan on having the lentil mix at the bottom and the squash on top, putting spinach on the edge and topping it all with a bit of feta and parsley ☺️

Parsley is an underrated herb! I think that sounds delicious.
I love parsley! Couldn't live without it in my garden. But it is also rather common in traditional Danish food.
Great job! I harvested parsley out of a big planter not long ago and was really surprised how cold and snow tolerant it was from last spring to now I’ve kept parsley circulating.

Yeah, I'm also very surprised! The other years when I've had parsley in planters they've been eaten by snails and birds, so this is the first year I see them this late. Does explain why it is in so many winter recipes :b
Aww, I'm glad I could inspire ☺️ I hope you have better luck with baby choi than I did. Kale is quite easy, but fertilize well and put a net over! Some kinds of lettuce also give at this time of year, and I imagine they'd be great for containers :)
